Left overs on a Sunday

I am starting as I mean to go on..........dined at home today with a winning combination of left over monkfish and spring onions.  I reluctantly added some Indonesian prawns (special offer in Sainsbury's). I say reluctantly, having watched several disturbing programmes on the state of our fishing industry and cheap imports (particularly of aforementioned prawns).  The final result was surprisingly good, aided and abetted by a flourish of parsley and fish sauce. It is amazing what you can do with a few scraps and a bit of Elvis.
